We love having an arsenal of summertime no-bake keto desserts to help make keto sustainable over the long term. When you can indulge in desserts like this, without the guilt, it makes keto that much easier!
The Filling: No-Bake Keto Cheesecake "Whip"
The first step in creating your parfait is to whip up a no bake keto cheesecake filling. You can scroll down to the recipe card or keep reading for a number of tips and notes on substitutions.
Go ahead and make up a big batch, your friends and family will love this dessert.
Choosing A Sugar Substitute
To make this as easy as possible, we've used some liquid sugar substitutes. Our choices here were Lakanto Maple Syrup and SweetLeaf Stevia drops.
The challenge with granulated sugar substitutes is they don't like to dissolve in the cream cheese mixture. You can work around this by using a powdered sugar substitute. You can turn any granulated sugar substitute into a powdered form by blending it with a Magic Bullet or high powered blender like a vitamix.
You'll also want to warm up the cream cheese more than you usually would to help the powdered sugar substitute dissolve. Mix it until dissolved. You may need to cool the mixture slightly before whipping depending on how much you had to heat it up. Place it in the fridge for about 20 minutes and then pull it out and whip it until light and fluffy.
How Much Sugar Substitute To Use?
The next question is how much sugar substitute you should use. There's no perfect answer to this because we will all have different preferences for the level of sweetness.
Having been on a keto diet for over three years, my tastebuds have changed and I prefer things less sweet. I recommend that you taste your mixture before whipping and create the perfect sweetness level.
This is where the liquid stevia works perfectly. You can add a few drops at a time right at the end until you get the sweetness balance just right for you.
Which Sugar Substitute Do You Recommend?
Our favorite sugar substitutes are Bocha Sweet, Allulose and Lakanto Monk Fruit Blend. I have a very sensitive palate and find that most sugar substitutes taste "off" unless I blend a few different one's together.
Altough, Bocha Sweet breaks that rule and tastes fantastic on its own.
Our sugar substitute of choice is BochaSweet and there's good reason for this!
BochaSweet is extracted from the Kabocha pumpkin which has been a staple in the Japanese diet for centuries. Consuming BochaSweet on a daily basis helps to support longevity and supports healthy blood sugar levels.
Even better? It tastes almost exactly like real sugar. There's no thin flavor or metallic aftertaste. I think most of us are looking for something that tastes amazing because only a full, satisfying taste is going to work over the long-term.
So, if we are going to go to all the work to make these keto parfaits so we can please our tastebuds AND stick to our keto diet. Well, we want the result to taste GOOD not... just 'meh' and unsatisfying. For this reason plus the health benefits, we reach for BochaSweet every time.

- Cream Cheese
- Unsalted Butter
- Lakanto Sugar-Free Maple Syrup
- Vanilla Extract
- Liquid Stevia
- Almond Flour
- Sugar Substitute of choice (see above for recommendations)

Keto No Bake Blueberry Cheesecake Parfait
Ingredients
- 16 Ounces Cream Cheese softened
- 4 x Ounces Unsalted Butter softened
- 1 Tbsp Lakanto Sugar Free Maple Syrup (or powdered sugar substitute)
- 1 Tsp Vanilla Extract
- 60-100 Drops Liquid Stevia
- 1 Tbsp Almond Flour
- 1 Tsp Sugar Substitute
- 1 cup Blueberry
Instructions
- Mix warmed cream cheese, softened unsalted Butter, Lakanto Sugar Free Maple Syrup, Vanilla Extract, Liquid Stevia on low speed until combined. If you use a granulated sugar substiute instead, the challenge will be dissolving it. Try powdering it at home and warming your ingredients. Mix until dissolved.
- Slice or chop blueberry .Assemble by mixing almond flour and sugar substitute at the bottom of your parfait glass.
- Then add about 1 Tbsp of the cheesecake mixture.
- Layer in berries and repeat until you have used ¼ of the cheesecake mixture. (You can make smaller servings as well and vary the amount of berries you use)
