My quest for keto caramel started with this question: "Can you figure out how to make a keto version of caramel"?
This has been my # 1 request this fall. Right next to my Keto Brownie Recipe! I've created a keto caramel that is thick and indulgent. It's amazing drizzled over just about anything.
I have used just a touch of real molasses in this recipe to get the flavor full and tasting more like caramel. The Macros turned out beautifully at 90% Fat ~ 8% Carb ~ 2% Protein.
This keto caramel recipe yields a thick and creamy caramel sauce that hardens in the fridge.
A small spoonful of this keto caramel satisfys that you can indulge while staying on your low carb or ketogenic diet.
Because this keto caramel hardens in the fridge, it would make a great holiday caramel recipe.
This keto caramel yields 4 ounces which is 24 one teaspoon servings.

Why Molasses?
The molasses in this recipe serves two purposes. First, it adds the “brown sugar” flavor that caramel has.
The other reason behind the molasses is getting the sauce to set up and harden in the fridge. You can make this without molasses, but don't expect it to set up the same way.

Why Bocha Sweet?
Our sugar substitute of choice is BochaSweet and there's good reason for this!
BochaSweet is extracted from the Kabocha pumpkin which has been a staple in the Japanese diet for centuries. Consuming BochaSweet on a daily basis helps to support longevity and supports healthy blood sugar levels.
Even better? It tastes almost exactly like real sugar. There's no thin flavor or metallic aftertaste. I think most of us are looking for something that tastes amazing because only a full, satisfying taste is going to work over the long-term.
So, if we are going to go to all the work to make these keto parfaits so we can please our tastebuds AND stick to our keto diet. Well, we want the result to taste GOOD not... just 'meh' and unsatisfying. For this reason plus the health benefits, we reach for BochaSweet every time.
Why Xanthan Gum ?
Xanthan gum is the ingredient in this keto caramel that holds everything together. Think of it as a binder or a glue if you will... You'll find it in many of my keto recipes. I recommend you purchase some for your keto pantry so you have it on hand when a keto recipe calls for it.

Thick & Creamy Keto Caramel (1 Net Carb/Serving)
Ingredients
- ¼ cup butter
- ½ cup BochaSweet
- 1 Tablespoon organic unsulphured Blackstrap Molasses
- ½ cup heavy whipping cream
- ¼ teaspoon xanthan gum
- ¼ teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions
- Gather all your ingredients together along with the measuring cups and measuring spoons you will need. This will leave you prepared through the process.
- Melt butter in a 3 quart medium stainless steel saucepan. Cook the butter until it begins to turn golden in color and you notice little flecks. You'll smell the butter beginning to brown.
- Add Molasses and BochaSweet to the mixture and cook for 2 minutes. The mixture will look "seperated" and odd at this point. Don't panic! It's supposed to look like this.
- Turn off heat and add cream and xanthan gum. Whisk/stir and turn heat back on. Allow it to boil for 2 minutes. The xanthan gum acts as a binder to hold the ingredients together.
- Remove from heat and add 1 teaspoon vanilla extract. Stir until combined and pour into a heat-safe container such as a small mason jar. Once cooled, store tightly covered in the fridge for up to two weeks.
