Wondering how to bake with coconut flour? It isn't as easy as you'd think!

My first tip for baking with coconut flour is to forget all the "rules of baking". Most of these rules revolve around dealing with the gluten in all-purpose flour. Coconut flour is completely gluten-free and has a different nutrient profile than all-purpose flour.

Unlike all-purpose flour, coconut flour is highly absorbent. Therefore, just a little bit goes a long way. In fact, ¼ c to ⅓ c of coconut flour is equivalent to a full cup of all-purpose flour ?. But, the adjustments don't end there...

You'll also need to increase the number of eggs and the amount of liquid used in your recipe. Plus, you'll want to use some kind of a binder. My personal go-to is to use xanthan gum. Other options are guar gum or even gelatin.

The reason you need a binder in your recipe is to mimic the magic that gluten normally performs in baking. Sometimes the increased number of eggs is enough of a binder to work great. Other times, when you find yourself with crumbling results, you'll know you need to add an additional option into your recipe.

?‍?How Do I Bake with Coconut Flour?

I'll never forget the first time I attempted to bake with coconut flour. The amount in the recipe was soooo small I assumed it was wrong.

This was before I understood how coconut flour acts compared to normal flours I'd baked with for decades.

With a little know how, you too can start converting your favorite recipes into a healthier version.

I've taken all my experimentation and what I've learned about baking with coconut flour and created this coconut flour baking guide.

While your recipe probably won't be perfect the very 1st time, this guide is a place to start. Make small adjustments to each batch until your results are perfect.

Tara's Favorite Brands of Coconut Flour

Over the years I've found that not all brands of coconut flour are equal. I'll list my favorite brands of coconut flour here and update them as they change.

Tip: Never purchase coconut flour from a bulk bin. Because it's so highly absorbent, these open containers allow it to soak up moisture and odors from the outside air.

Storing Coconut Flour

Because coconut flour is highly absorbent, you'll want to store it in an air tight container in a cool location.

The more your coconut flour is exposed to open air, the more moisture it will soak in. This can lead to unreliable results when you're baking. Therefore, I recommend you open your container only long enough to measure your coconut flour. Then, immediately re-seal it.

We also recommend you purchase coconut flour in smaller amounts. Consider that ¼ to ⅓ cup of coconut flour is equivalent to a full cup of all purpose flour ? . So, a 1 lb bag of coconut flour is like having approximately 4 pounds of all purpose flour on hand. Consider this before purchasing coconut flour in bulk.
