I know many of you have been waiting for me to perfect and post this one!!
It's no mistake that it's just in time for the kickoff of football season. Now if the weather would just start feeling like football season.
This keto queso dip is a clear winner for all of your gatherings & potlucks this fall.
Pair it with pork rinds or whip up my Keto Nacho Chips. Then grab a few bags of traditional chips for the non-ketoers in your life and you're all set!
Your New Favorite Keto Dip
This Keto Queso Dip Recipe is the perfect blend of cream cheese, cream, Rotel, green chilies, and shredded cheese.
I've added a little heat with some optional Red Pepper Flakes. If you aren't a fan of “spicy”, omit these!

This recipe allows for substitutions easily. Swap out pepper jack for Monterrey jack or your favorite low carb cheese!

Most of these ingredients can be found at your local supermarket but I've linked them here for your convenience!
One thing you probably DO want to order online are pork rinds! They are much more economical online.
This dip also pairs well with my Nacho Chip Recipe!

Keto Queso Dip (1 carb | 0 net carb per serving)
Ingredients
- 1 pound pepper jack cheese, shredded
- 2 bricks full fat cream cheese 8 ounces
- ½ cup heavy whipping cream
- ½ cup water
- 1 can Rotel 10 ounce can
- 1 green chilis 4 ounce can (optional)
- 1 teaspoon salt
- dash cayenne pepper
- 1 teaspoon red pepper flakes optional
Instructions
- Melt together in the nmicrowave or cook in a crockpot.
- 80% fat, 5% Carb, 15% Protein
- Cook in crockpot on high for 2 hours, stirring every 20 minutes.
- Serve warm with your favorite pork rinds!
