This Keto Chipotle Aioli recipe is the perfect companion to my fried Brussels sprouts recipe. It's also fantastic paired with hamburgers, grilled chicken thighs, or as a veggie dip.
I created this keto recipe because we wanted to get away from store-bought dips that are loaded with unhealthy vegetable oil (more info on this below). This is the first in a series of flavored aioli and dip recipes that will be coming over the years. If you have a specific flavor, please comment below.
In this keto recipe, you'll notice I've used True Lime packets instead of lime juice. I actually used them when I discovered I didn't have any fresh limes in the fridge and was so pleased with the results, they ended up in the final recipe. However, know that lime juice works wonderfully as well. You can substitute a teaspoon of lime juice for the true lime packets.
Tip: Carefully Choose Your Mayo
Mayonnaise is the base of this recipe and it's important to choose a no-sugar-added high-quality mayo made with healthy oil.
For optimal health, we want to avoid polyunsaturated fats which include vegetable oil, canola oil, margarine, corn oil, and many more. Polyunsaturated fats encourage oxidation in our body and should be avoided. Look for a video & blog post coming where we will break this down.
Instead, choose monounsaturated and saturated fats such as avocado oil, coconut oil, olive oil, peanut oil, butter, ghee... preferably organic lard/tallow (animal fats).
Here are a few healthy may options that we choose. A few of them have a little added sugar but that's going to be better than choosing a vegetable oil option. Beware that many mainstream brands have an Avocado Mayo or an Olive Oil Mayo but these also contain vegetable oils. Usually canola oil.
At Costco, you can find Sir Kensington's Avocado Oil May or Chosen Foods Avocado Oil Mayo which are both good options.
