Actually, I love to double or triple this recipe and then make different keto cauliflower rice bowls. In fact, I'll often throw a serving of this rice in an individual container and then put it in the freezer as part of my meal prep. Then, when we cook something like our InstaPot Pot Roast, I'll take the leftovers and put them on top of my already prepped keto buttery garlic rice. It's a great way to create some variety in your weekly keto meal plan.
One thing I love about this keto recipe is that it only takes four ingredients to make. You dump them in the rice cooker and turn it on. Then, if you remember to, stir halfway through to incorporate all the melted butter and seasonings.
But, if you're forgetful or get distracted, you can actually skip stirring halfway through and just stir it all together at the end. I can't tell you how many times I got distracted while making this keto buttery garlic rice and forgot all about it. It always turns out beautifully.

Keto Buttery Garlic ‘Rice’
Rice Cooker Method
- Put all ingredients into the rice cooker, place lid on, and turn it on. Set a timer for ten minutes and stir. Place lid back on and cook for an additional ten minutes or until the rice cooker automatically changes to the warm setting.
- Place all ingredients in a medium-sized saucepan. Cook over medium heat, stirring occasionally for 10-15 minutes or until the cauliflower rice is cooked to the consistency you desire.
- Place all ingredients in a medium-sized microwave-safe bowl. Cook for two minutes on full power and stir. Cook for four minutes on full power and stir again. Check for doneness. Continue to cook in two-minute increments until the rice is cooked to your satisfaction. We find that 8 total minutes is our sweet spot.

This keto buttery garlic rice is flexible and can be seasoned any way you'd like it. Try adding a half teaspoon of smoky chipotle powder for a mexican flair. Chop up some onions, mushrooms, red peppers, and celery and throw those into the rice cooker along with the other ingredients for a flavorful keto vegetable medley.
