The secrets of my mom's Keto Quiche lie in the magical flavor enhancers she used…
The tastes and flavors come together perfectly with the use of dry sherry, aminos (either Braggs Liquid Aminos or Coconut Aminos) and ground mustard seed.
You don't taste any of these seasonings in the finished product. Their magic comes in the way they enhance the savory flavors of all the yummy stuff packed into this casserole.
And even better…
We snuck a serving of veggies in.
When my family first tasted this, they didn't believe there were ANY veggies in it.
Yup.
It's THAT good.
Go ahead, serve it up and don't mention the cauliflower rice hiding in here. They won't know it's there!
Modifying Our Original Quiche Recipe
The original recipe, found here contained a number of non-keto ingredients.
I replaced the Worcestershire sauce with Bragg's Liquid Aminos. Worcestershire contains some sugar which I wanted to avoid adding.
I reconfigured the ratio of eggs to liquid and completely omitted the cream of mushroom soup.
I got rid of the milk and used a combination of heavy cream and unsweetened almond milk instead. If you wanted to bump up the fat a little more–use all heavy cream.
Finally, I replaced the bread with cauliflower rice.
In the end, I had a delicious keto quiche that tastes eerily like the original recipe!
This casserole is incredibly versatile!
It's truly comfort food meets practicality.
So versatile that it's become a staple in our keto diet.
We like to mix things up by using organic ground beef and adding a tsp of homemade taco seasoning plus a tsp of salt. This makes a great Tex-Mex casserole.
Substitute bacon or ham for the ground sausage or mix a few of these together to keep things interesting!
Swap out the meat for some of your favorite veggies such as lightly steamed broccoli, fresh mushrooms or a handful of chopped fresh tomato.

Keto Quiche
Ingredients
- 12 eggs large
- ½ cup heavy whipping cream
- ½ cup unsweetened almond milk
- 12 ounces Sharp White Cheddar , shredded
- ½ Tablespoon dry sherry
- 1 teaspoon coconut aminos
- ½ teaspoon dry mustard
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- dash cayenne pepper
- 1 pound sausage (browned)
- 16 ounces riced cauliflower
Instructions
- Preheat oven to 325 Convection/350 standard.
- Prepare a medium sized casserole pan by greasing with coconut oil or avocado oil.
- In a large mixing bowl, whisk together eggs, cream and almond milk.
- Whisk in dry sherry, aminos, dried mustard, onion powder, garlic powder and cayenne pepper.
- Stir in riced cauliflower (frozen), browned sausage and shredded cheese.
- Pour into casserole pan and bake for 75 minutes. The edges of the crustless quiche should be browned and if you bump the baking dish it should jiggle slightly. (See notes for speeding up baking time)
- Turn off the oven and let the crustless quiche sit for 30 minutes. At the end of 30 minutes the quiche will be set in the middle.
- Remove from oven and serve!

How To Make Keto Quiche
Time needed: 1 hour and 30 minutes.
This savory keto quiche recipe has all the makings of the perfect comfort food. Mix things up by changing the type of meat you use! Try ham, bacon, ground hamburger...try adding different low-carb veggies!
- Gather your ingredients & supplies
12 eggs large
½ cup heavy whipping cream
½ cup unsweetened almond milk
12 oz shredded sharp cheddar cheese
½ Tbsp dry sherry
1 tsp Coconut Aminos
½ tsp Dry Mustard
¼ tsp onion powder
¼ tsp garlic powder
dash cayenne pepper
1 lb sausage (browned)
16 oz riced cauliflower - Assemble the quiche
Preheat oven to 325 Convection/350
standard .

Serve the quiche hot out of the pan, sprinkled with some shredded cheddar cheese!
This will store in the fridge for up to 4 days… well… it's NEVER lasted that long! - Note
To have this done faster, thaw the riced cauliflower in the microwave before mixing it in. This will reduce baking time to approximately 50 minutes!

Hi, is there something you can sub for dry sherry or can it just be omitted?
