Keto Deviled Eggs just might be my favorite food on the planet.

As I researched different ways of making deviled eggs, I quickly realized that our family recipe is unique… and… I had put my own twist on it….

In fact, my sister and my mom make these just a little bit differently. According to my husband and my three picky teenagers, mine are the best. And they aren’t afraid to tell me they don’t like stuff I make! So… I went with my recipe.

The thing was… I had NEVER measured my ingredients when I made them!!

So, in my test batch, I had to figure out measurements… which was a little tricky. But, I’m sure my kids will appreciate that this is documented if they someday learn to cook!

When I filmed the video, I had 15 eggs but they were more of a medium-sized egg than a large-sized egg. So, these ratios are correct for a dozen regular (large) sized eggs.

If you're working with farm-fresh eggs that are more of a medium-sized, then this works for 15 eggs.

The cool thing about deviled eggs is that they are REALLY difficult to mess up. So, I wouldn’t sweat it.

In this keto deviled egg recipe, I sometimes use ¼ teaspoon of white pepper and other times use ¼ teaspoon of lemon pepper. It really just depends on my mood and what we have on hand.

Filling the Keto Deviled Eggs

For filling the keto deviled eggs, I decided to try the Ziploc bag method. I really found it less messy and quicker than the traditional “spoon-filled” method.

To do this, you just fill a ziplock bag in one corner (as shown on the video) and then cut the corner off. Then pipe in your filling however you’d like. I go for the quick and done method 😛

The Best Way To Hard Boil Eggs

Figuring out the very best way to hard boil eggs has been an ongoing conversation in my family for years. I’ve tried all the different methods and return time and time again to how my mom taught me to hard boil eggs. I believe this is the method found in Joy of Cooking.

Place your eggs in the bottom of a pan and then cover them with water so they are covered by at least a half-inch of water.

Place the pan, covered, on the stovetop and bring water to a boil.

Remove the cover from the pan and reduce heat so that the water continues to boil gently. You want to avoid the eggs dancing around too much.

Boil for 10-12 minutes.

While boiling, prepare an ice bath (ice & water) in a large bowl.

Ingredients

  • 12 large eggs, hard-boiled
  • ¾ cup mayonnaise
  • ⅛ cup yellow mustard
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper
  • paprika to garnish

Instructions

  • Start with cooled, hard boiled eggs.
  • Cut each egg in half long wise and remove the yolk from the egg white. Place yolks in a small bowl that will be good for mashing later.
  • Mash the egg yolks in your bowl with a fork until you have very small pieces of mashed yolk.
  • Stir in mayonnaise, mustard, salt and pepper and mix until completely combined.
  • Fill each egg white shell with the egg mixture.
  • These will keep covered in the fridge for 3-4 days. The trick may be making them last that long!
