Cut each egg in half long wise and remove the yolk from the egg white. Place yolks in a small bowl that will be good for mashing later.
Mash the egg yolks in your bowl with a fork until you have very small pieces of mashed yolk.
Stir in mayonnaise, mustard, salt and pepper and mix until completely combined.
Fill each egg white shell with the egg mixture.
These will keep covered in the fridge for 3-4 days. The trick may be making them last that long!
