Hey, it's health coach Tara. Welcome to my very first What I Eat In A Day On Keto episode. Episode 1 is really fun because we're getting ready to film some brand new keto recipe videos for our YouTube channel, Tara's Keto Kitchen. So you'll be hearing about some new recipes.
Let's start with breakfast. I'm going to share exactly what I eat in a day as a health coach and what my keto diet routine is to give you some inspiration for your own routines. Let's jump into the day.
Breakfast
Upon waking I have a cup of black coffee with a drizzle of heavy whipping cream.
It's now 11:30 and I know I'm not going to have lunch until mid-afternoon today. We have a lot happening on this particular day which, of course, influences my food choices.
Mid-morning I usually have a cup of keto coffee, but today I’m eating my Keto Chocolate Mug Cake. I feel like I'm doing something naughty eating chocolate for breakfast, but I just made this mug cake for one of our videos so it's an easy choice to keep myself on my keto goals. And then it doesn't go to waste.
I garnish the mug cake with a dusting of powdered BochaSweet, one of my favorite sugar substitutes. Use any sifter you have on hand and just tap the edge to dust the Keto Chocolate Mug Cake with a little of your own favorite powdered sugar substitute and dig in.
Lunch
Now it's lunchtime and I'm going to eat my Spinach Artichoke Chicken Bowl that was just made. This is my twist on spinach artichoke dip which we love in this house.
I added chicken and turned this traditional appetizer into a nice, chunky dinner bowl that tastes so good.
Our Keto Spinach Artichoke Chicken Bowl is made in an Instant Pot.
Dinner
It's now dinnertime and I already have food cooking. Dinner for us will be artichokes with mayo, bacon, and our favorite extra sharp cheddar cheese.
Artichokes are in the Instant Pot. We love artichokes as you may know. All we did was cook them for 30 minutes at high pressure and let them naturally release for about 24 minutes.
We like to have a side of mayo with our artichokes. Some people like having them with butter.
We are also cooking up some Applegate Naturals Uncured Sunday bacon. Jeremy and I are going to split this whole package. These ingredients have a little bit of sugar in them, but the zero sugar type was out of stock in the store so this was the next best thing.
The way we like to cook our bacon is by baking it. Lay it flat on a cookie sheet and depending on how thick the slices are we usually bake them at about 375 or 400 degrees in a regular oven.
We love extra sharp cheddar cheese. So I'm going to have an ounce, and Jeremy will have 2 oz. And that completes our dinner!
