Separate the eggs. Place the whites in a medium bowl and the yolks in a smaller bowl.
Whip the egg whites & cream of tartar until the egg whites form soft peaks.
In a separate bowl, combine parmesan, cream cheese, xanthan gum, Acacia Fiber, egg yolks and a pinch of salt. Blend until fully combined.
Combine the 2 mixtures by folding them gently together.
Scoop batter onto a lined baking sheet.
Sprinkle some sesame seeds on top of each “cloud”.
Bake at 300 degrees for 20-25 minutes.
Allow to cool before removing your cloud bread from the pan.
Store for up to 2 days in a tightly sealed container. If you need these to keep longer, store in the fridge or freezer.
