These spiced keto donuts with maple glaze are an easy and delicious breakfast. These soft, moist donuts are made with coconut flour instead of almond flour, AND they’re high in fiber and beneficial MCT’s.
In a medium-sized mixing bowl combine the cream, water, avocado oil, eggs, sugar substitute, vanilla extract, and spices. Blend on low speed until completely combined and smooth, about one minute.
In a small bowl, mix together coconut flour, baking powder, xanthan gum, and salt and stir to combine.
Mix the coconut flour mixture into the wet mixture until completely combined. Allow mixture to rest for 5 minutes. The batter will thicken considerably.
Then, divide the batter between ten cups in your donut pan. The donuts will rise as they bake.
Bake at 325 degrees for 20-25 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool for 5-10 minutes before removing from the pan.
For the Maple Glaze:
In a small bowl, combine all ingredients and whisk or blend until sugar substitute is completely dissolved. You may heat the ingredients in the microwave if the sugar substitute isn’t dissolving at room temperature. Drizzle the glaze over your cooled donuts and enjoy.
