These keto waffles are delicious and satisfying. We double this batch and make it on Sunday morning and freeze the leftovers for easy breakfasts throughout the week. They are great in the toaster!
Combine all ingredients in a large bowl and blend for 2 minutes. It's important to blend the mixture for this long to allow the coconut flour to absorb the liquid.
Note that you can substitute 1 teaspoon of baking powder for the cream of tarter and baking soda above.
Preheat your waffle iron and allow the mixture to rest. This provides time for the coconut flour to soak up the wet ingredients. You'll notice that your batter is stiffer after you've given it time to rest.
Bake in a waffle iron for 5-7 minutes and enjoy!
