This creamy sausage gravy uses xanthan gum, butter and cream to yield a thick and flavorful gravy perfect for keto biscuits and gravy. Pair these with any of my keto biscuit recipes for a delicious and filling breakfast.
Brown the sausage in a large skillet until thoroughly cooked. Remove the browned sausage from the pan and set aside for use later. You’ll now have the sausage grease in the bottom of the pan.
In the meantime, heat 1 ½ cups water to boiling using your microwave, stovetop or an electric kettle. Keep hot until needed in a few steps.
Add 2 Tablespoons butter to the sausage grease and allow to melt.
Then add ½ cup finely minced onions and cook slowly for 6-8 minutes until onions are tender but not browned.
Over low heat, while stirring with a wire whisk, sprinkle in 2 tsp xanthan gum. Whisk the entire time so it doesn’t clump. Cook for 1 minute over medium-low heat.
Remove from heat.
Gradually whisk in ½ cup hot water, adding the remaining water ½ cup at a time. Then add cream, salt, white pepper, parsley and browned sausage. Allow gravy to simmer 2 -4 minutes and then serve over keto biscuits.
