Easy)Mexican Chicken Recipe for the crockpot (
Optional Add In’s:
- 1 cup mushroom
- 1 cup peas (frozen)
- 1 cup cilantro (fresh or dried)
- 1 cup Beans (extra)
- Place all ingredients except frozen vegetables in your crock-pot.
- Turn crockpot on Low
- Cook on Low for 6 hours and check. Chicken should pull apart easily. (Estimated cooking time 6 - 8 hours)
- Once cooked, shred chicken and add frozen vegetables and extra salsa to taste.
Dollop with plain greek yogurt
Crumble a tortilla chip (just 1 or 2) on top
Lightly sprinkle cheese on top
Enjoy over a bed of spring lettuce
